Chestnut ice cream recipe


Chesnut Ice Cream (4-6servings)

Ingredients

8 oz (225g) tinned sweetened chestnut purée

2 tablespoons sweet sherry or milk

1/2 pint (280ml) whipping cream

2 oz (50g) icing sugar.

Preparation Method for Chesnut Ice Cream

Combine the chestnut purée with the sherry or milk, and mix to a smooth paste.

Whip the cream with the icing sugar until it holds soft peaks, and fold it into the chestnut purée

Turn the mixture into a shallow freezer tray or individual serving dishes.  Cover and still-freeze without stirring, until firm.  Enjoy your chesnut ice cream.
