Honey Ice Cream With Pine Kernel Nuts (4-6 servings)
Ingredients
300ml / 2 tbsps honey
6 egg yolks
500ml / 18fl oz milk
30g / 2 tbsps pine nuts
Preparation Method
Whisk the honey and the egg yolks together for about 1 minute
Bring the milk to boil and pour the milk over the egg mixture, whisking continuously.
Pour mixture back into the saucepan, add pine nuts and place over a very low heat, stirring continuously, until the sauce thickens and will coat the back of a spoon.
Allow the mixture to cool and then pour into the bowl of an ice cream maker. Set the machine in motion. If an ice cream maker is not available, part freeze the mixture in a bowl, whisk until smooth then refreeze. Whisk again and freeze in a covered container until firm.
Once the ice-cream is firm, spoon into a container and keep in the freezer until needed
