Lemon Ice Cream (6 servings)
Ingredients
3 juicy lemons
6 oz (170g) icing sugar
3/4 pint (420ml) double cream
3 tablespoon iced water
Preparation Method
Using finest blade on the grater, grate the zest from 2 of the lemons, and squeeze the juice from all 3.
Combine the zest, juice and sugar and if possible set aside for 30 minutes to allow the flavor to develop.
Whip the cream with the water until it holds soft peaks, then whisk in the sweetened lemon juice.
Turn the mixture into a shallow freezer tray, individual servings dishes or hollowed out lemons.
Cover and still freeze, without stirring, until firm
