Delicious Ice Cream and Sorbet Recipes
Parfait (8 servings)
Ingredients
3/4 cup / 175g sugar
60ml / 4 tbsp water
4 egg yolks
1/2 cups / 350ml 12 fl oz double cream
Preparation Method
Heat the sugar in water over a medium heat until dissolved
Raise the heat and boil the syrup for 30 seconds
Whisk the egg yolks until they are thick
Pour hot syrup over the yolks, whisking constantly. Continue whisking until the mixture has cooled down and thickened. To speed this process up, you can place the mixing bowl in a bowl of ice.
If you are flavoring the ice-cream, add the remaining ingredients at this stage.
Whisk the cream until thick. Fold into the egg mixture starting with just one spoonful and gradually adding the remainder.
A stiffly beaten egg white can also be folded in if you would like the parfait lighter.
