Delicious ratafia ice cream recipe
Ratafia Ice Cream (4-6servings)
Ingredients
4 oz (120g) Ratafia Biscuits
3/4 pint (420ml) whipping cream
4 oz (120g) icing sugar
almond or ratafia essence to taste
Preparation Method for Ratafia Ice Cream
Crush the ratafias to coarse crumbs. Whip the cream with the icing sugar and a little almond or ratafia essence until it holds soft peaks. Fold in the crushed ratafia
Turn the mixture into a shallow freezer tray or individual servings dishes. Cover and still-freeze without stirring, until firm.
