Low Carb Ice Cream - Ice cream is loved by everyone, however for those on low carb diet it is not easy to find low carb ice cream.  Low or no-sugar ice cream seem to be wedded to low-fat creams, riche ice cream come pack with sugar.  So to have low carb ice cream, low carb dieter just have to do it yourself.  Good low carb ice cream can easily be made if you have an ice cream maker.  All you do is to find a low carb ice cream recipe, add the ice cream mixture and in about 20 minutes you will have your low carb ice cream.  Making low carb ice cream is rewarding, it is easy, delicious and inexpensive.  A commercial ice cream like the below one can have between 18 - 32 grams of car per 1/2 cup, the low carb ice cream version provided here only contain between 4.5 - 6.5 gram per 1/2 cup.

 

Vanilla Low Carb Ice Cream

Ingredient For Low Carb Vanilla Ice Cream

  • 2 cup light cream

  • 1/2 cup water

  • 1 teaspoons vanilla extract

  • 12 pack Splenda sugar substitute

  • 4 egg yolks

Preparation Method for Low Carb Ice Cream - Vanilla

    Prepartion of low carb ice cream start with slowly heat 1 cup cream, Splenda sugar substitute, and vanilla extract in the top part of a double boiler over hot but not boiling water.  Stir in and whisk the low carb ice cream mixture regularly.      Beat the egg yolks in a glass jar until smooth.  As the cream begin to heat, dribble a little of it (1 tablespoon at a time) into the yolks, constantly beating the yolk as you do.  Repeat this with about half of the cream.

    The low carb ice cream mixture is then remove to a double boiler.  Whisk the low carb ice cream mixture constantly until it thicken and coats a spoon (in a minute or so).  Take the double boiler from heat and whisk in the remaining 1/2 cup cold cream and 1/2 cup water.  You can stain the low carb ice cream mixture if you like.  Put the custard in a flat bottom stainless steel container, and place the low carb ice cream mixture in the freezer for 2 hours or longer and your low carb ice cream is ready to serve.

 

Low Carb Ice Cream - Chocolate Variation.

To make your chocolate low carb ice cream add 1/2 ounces of unsweetened chocolate to the custard when it is being stirred in the double boiler.  do this before the egg yolks have been added. Stir the low carb ice cream mixture until dissolved.  Increase the Splenda sugar substitute to 18.  The carb contend for chocolate low carb ice cream are 5.6 gram in 1/2 cup.  Enjoy you low carb ice cream.
