Delicious Ice Cream and Sorbet Recipes

Apple Sorbet (4-6 servings)

 

Ingredients

120g / 4 oz sugar

450g / 1 lb apples peeled and chopped 

2 tbsps lemon juice 

1 egg white and a pinch of salt, beaten until stiff

Preparation Method

Dissolve the sugar in 175ml / 6 fl oz water, bring to boil and boil continuously for 5 minutes.  Set aside to cool.

Blend the cooled syrup, the apple and lemon juice in a blender until smooth.

Pour into a plastic container and freeze for 1 hour. 

After 1 hour, gently incorporate the egg white using a wooden spoon.  Return the sorbet to freezer until served.
