Refreshing mango sorbet recipe

 


Mango Sorbet (4-6servings)

Ingredients

  • 3 mangoes

  • Juice of 1/2 lime

  • 120ml / 4 fl oz dry white wine

  • 120ml / 4 fl oz mineral water

  • 1 egg white

  • Liquid sweetener to taste (optional)

Preparation Method for Mango Sorbet Recipe

Peel the mango and cut away the flesh from around the large center stone.

Put the mango flesh into a liquidizer or food processor, and blend until smooth.

In a bowl, mix together the lime juice, wine and mineral water add this to the liquidized mango and mix thoroughly

Place the mango purée in a freezer and freeze until just beginning to set around the edges.

Break up the ice crystals in the mango mixture using a fork.

Whisk the egg white until it is stiff, then fold this carefully and thoroughly into the mango mixture.  Sweeten with liquid sweetener to taste, if used

Return the mango mixture to deep freeze, and freeze until completely set.

To serve remove from the deep freeze 10 minutes before serving, then spoon into individual serving dishes.
