Delicious Ice Cream and Sorbet Recipes

Pear Sorbet (4-6 servings)

 

Ingredients

  • 5 tbsps sugar

  • 450g / 1 lb pears, peeled and chopped

  • 3 tbsps lemon juice

  • 1 egg white and a pinch salt, whipped until stiff.

Preparation Method

Dissolve the sugar in 150ml / 5 fl oz water, add chopped pear, bring to boil and boil continuously for 10 minutes.  Set aside to cool

Once cool, blend the above in a blender until smooth.  Stir in lemon juice.

Pour into a plastic container, and freeze for 1 hour.

After 1 hour remove the sorbet and beat it well with a fork.  Incorporate the beaten egg white gently, using a metal spoon.

Cover and return to the freezer until needed.
