Delicious Ice Cream and Sorbet Recipes

Rhubarb Sorbet (4 servings)

 

Ingredients

  • 350ml / 12 fl oz water

  • 175g / 6oz sugar

  • 450g / 1 lb rhubarb

Preparation Method

Peel the rhubarb and cut the stalks into small pieces

Mix together in a sauce pan the water, sugar and rhubarb

Bring to boil and cook for 5 minutes

Blend until smooth with a hand mixer and pour into a bowl of ice cream maker.  Set the machine in motion and remove when the sorbet is crystallized.  Spoon into a container and keep in the freezer until served.

If an ice cream maker is not available, part freeze the mixture in a shallow container, break up gentle with a fork and then pour into a covered container and freezer until needed.
