Delicious Ice Cream and Sorbet Recipes

Thyme Sorbet (4 servings)

 

Ingredients

500ml / 18 fl oz water

150g / 5oz sugar

4 small sprigs fresh thyme in flower

Preparation Method

Boiled together the water and sugar until a reasonably thick syrup is reached - this will take about 15 minutes.

Remove from the heat and add spring of thyme.  Remove the thyme from the syrup after 2 minutes and drain the syrup through a very fine sieve.

Pour the syrup into an ice cream maker and set in motion

When the sorbet has crystallized spoon into a container and keep in the freezer until needed.

If an ice cream maker is not available, part freeze the mixture in a shallow container, break up gentle with a fork and then pour into a covered container and freezer until needed.
